The Hernández family’s legacy has run deep through the hills of Pitalito, Huila for three generations. Today, Finca Los Nogales has evolved into a modern coffee hub under the leadership of Oscar Fernando, honoring his father Ricaurte’s vision for a sustainable, high-quality future.

This low caf wonder showcases the family’s innovative spirit. Ripe cherries are hand-selected and gently opened with an 80°C water bath before undergoing a natural decaffeination process using a solvent derived from coffee pulp, preserving all the sweet, tropical complexity without the jitters. A 96-hour fermentation with a house-cultured sourdough starter follows, unlocking creamy, candy-like textures and layered fruit notes.

Fruitiest decaf I have ever tasted

WHAT??? DECAF????!!!

IVE NEVER TASTED DECAF LIKE THIS. got it on Trade weekly release because I was curious and damn. It’s straight up fruit juice and no hint of any decaf at all. I’m seriously stunned.

Worst Coffee Ever

This is indeed the worst smelling coffee aroma we have ever had. In fact the aroma was so destateful that we could not drink it.

We're sorry to hear your first experience with this coffee wasn’t enjoyable. Sometimes coffees with unique processing, like this co-fermented decaf, can show some surprising notes at first. With the right brew, it really opens up into something bright and fruity!

Here’s a recipe I recommend for pourover (V60 or similar):
Use 20 g of coffee, ground medium, with 320 g of water at 94 °C / 201 °F. Bloom with 40 g of water for 30 seconds. Pour slowly to reach 180 g by 1:15, then finish pouring to 320 g by 2:15. Total brew time should be about 3 minutes.

This coffee comes from Finca Los Nogales, a farm that has produced Brewers Cup–winning coffees. It’s not your typical decaf, it leans toward strawberry and papaya rather than the usual chocolatey profile. We hope this recipe helps you experience its unique character.

Barista-Approved!!!

Amazing aroma and lime-acidity! I was blown because the lime acidity seems to “pop” at the tip of your tongue, but mellows into mango and raspberry towards the back. I was also shocked when i first smelled it: It reminded me of a pop rocks, raspberry, and white chocolate.

My brew recipe was 30g in and 480g out with a ceramic Origami with Kalita 185 filters, but I will tweak it around to help its nuance.
